Cooked rice 1 cup
Banana leaf cut into 4 pieces 1
Ghee 2 tablespoons
Raisins 3 tablespoons
Scraped coconut 3/4 cup
Brown sugar ½ cup
Coconut milk 1/4 cup
Green cardamom powder 1/4 teaspoon
Oil 1 teaspoon
Step 1: Heat ghee in a non-stick pan, add raisins and saute till lightly browned.
Step 2: Put rice in a bowl, add sauteed raisins and mix well.
Step 3: Heat the same pan, add coconut, brown sugar and coconut milk and mix well. Cook for 3-5 minutes. Add this mixture to the rice and mix well. Add cardamom powder and mix well.
Step 4: Discard the veins of banana leaves, halve lengthwise and soften by placing on direct flame.
Step 5: Place a portion of the rice mixture on one side of each leaf and wrap to make a packet.
Step 6: Heat oil in a non-stick pan, place the packets on it and cook till the underside is browned, flip and cook on the other side too.
Step 7: Place them on a serving plate, unwrap one of the packets and serve immediately.
