Omelette With Mushroom, Capsicum And Sprouts

Eggs 8
Mushrooms chopped 10-12
Red capsicum chopped 1 medium
Mixed sprouts blanched 1 cup
Salt to taste
Oil 4 tablespoons
Onions chopped 2 medium
Green chillies chopped 4

Step 1: Break two eggs in a bowl, add salt and beat well. Heat one tablespoon of oil in a non-stick pan, add one-fourth portion of onions and green chillies and saute for one minute.
Step 2: Add beaten eggs and mix. Sprinkle one-fourth portion each of mushrooms, red bell pepper and mixed sprouts. Cook till the egg sets and flip it. Cook on the other side for a minute.
Step 3: Serve immediately. Similarly prepare the other omelettes.
