Oil 2 tablespoons
Crushed garlic 1 tablespoon
Green chillies finely chopped 1 teaspoon
Onions finely chopped 2 medium
Tomato finely chopped 1 medium
Green capsicum finely chopped 1 medium
Red chilli powder 1 teaspoon
Turmeric powder 1/2 teaspoon
Fresh coriander leaves chopped 2 tablespoons
Salt to taste
Step 1: Heat oil in a non-stick pan, add garlic and green chillies and saute till garlic turns pink.
Step 2: Add onions and saute till they turn translucent. Add tomato and capsicum, mix and cook till the tomato turns pulpy.
Step 3: Add red chilli powder, turmeric powder, one tablespoon coriander leaves and salt. Mix well and cook on low heat for a minute. Add little water, mix and cook for a minute.
Step 4: Break the eggs, one by one, into the pan, cover and cook on low heat for two minutes.
Step 5: Serve hot garnished with remaining coriander leaves.
