Brown rice soaked in water for 3-4 hours ½ cup
Full cream milk 1 litre
Saffron (kesar) 6-8
Cashewnuts chopped 10-12
Raisins 2 teaspoons
Dates seeded and chopped ½ cup
Sugar 1/4 cup
Step 1: Heat milk in a deep non stick pan. Drain and crush brown rice coarsely. Add this to the milk and cook till rice is almost done.
Step 2: Add saffron and mix and continue to cook. Add cashewnuts, raisins, dates and cook till everything blends well.
Step 3: Add a little water or milk if the mixture is too thick and cook till rice is completely done. Add a little sugar if you want the payasam sweeter.
Step 4: Garnish with pistachios and serve warm.
